Meatless Monday: Veggie Recipe of the week
So welcome to a new feature on Love, Amybecca...x its called Meatless Mondays and every Monday I will post a meatless/vegetarian/vegan recipe to for you to try!
I made this casserole last night, me and my boyfriend have been making variations of this quite a lot through the cold months. Its a great hearty meal, that requires very little preparation and is lovely and warming on a cold winters night.
Here's our take on it, but remember, you can add whatever you like and switch out ingredients to suit.
Ingredients:
1 x Leek
Red Cabbage
2 x Potatoes
2 x Sweet Potatoes
1 Onion
5 x Meat Free Lincolnshire Sausages
Pearl Barley
Green Lentils
4 pints of Vegatable stock (we used Kallo Vegatable stock - Dairy Free, Egg Free, Gluten Free, Lactose Free, Organic, Added Sugar, Vegan, Vegetarian, Wheat Free) (Makes it a fantastic choice to Vegetarians, Vegans and anyone with food allergies).
Method:
1. Take one Leek & chop.
2. Take 2 potatoes, peel and chop into small cubes or slice.
3. Take 2 Sweet Potatoes. Peel and slice or cube.
4. Take one onion. Peel and dice or slice.
5. Take some red cabbage. Slice.
6. Take some meat free sausages, allow to defrost and slice into small slices (to enable a quicker cooking time).
7. Add 4 pints of Vegetable stock (or enough to cover vegetables)
8. Add Lentils
9. Add Pearl Barley
10. Put in over on 180 degrees (Gas Mark 6) and cook for 1-2 hours.
This recipe serves 4-6 people.
