Meatless Monday: Tofu & Vegetable Patties
Hello & Welcome to another episode of Meatless Monday! Today's blog post are Tofu and Vegetable patties.
Ingredients:
- 1 Carrot, Grated
- Bunch of Spring Onions, Sliced
- 1 Garlic Clove, Crushed
- 3cm Piece of Ginger, Grated
- 400g Block of firm Tofu, drained and crumbled.
- 2 Eggs, lightly beaten
How to make them:
- Combine all the ingredients in a bowl and mix.
- Place in muffin trays, and cook in the oven, at 200 degrees until the patties begin to brown.
- Serve with salad.
