Meatless Monday: Calzone (Vegetarian & Lactose free)

Over the Christmas break, me and the Mr made some vegetarian Calzone for my parents, and they (and us) loved it!

It was easy enough to make and the taste was out of this world. Even if you aren't Vegetarian I honestly think you will love these versions of Calzone.

Ingredients:
For dough...
200g '00' Italian Flour
6g of dried yeast
140ml warm water
15ml extra virgin olive oil

For filings...
Tomato Puree
Peppers
Tomatoes
Lactose Free Cheese
Halloumi 
Vegetarian Pepperoni
Spinach
Mushrooms

Recipe:
1. Add dough ingredients to bread maker. Put on dough setting and leave for recommended time (1.5 hours for our bread maker).

2. When dough is ready, roll into four circle shapes. Dough needs to be rolled fairly thinly.



3. Add tomato puree across the entire dough.

4. Add ingredients required to half of the dough. (like the picture below)

5. Fold over the top of the dough (the side without the ingredients on) and press down the edges to seal the Calzone.

Option 1 Filings:
Tomato Puree
Tomatoes
Peppers
Vegetarian Pepperoni
Grated Lactose Free Cheese




Option 2 Filings:
Tomato
Pepper
Sliced Mushrooms
Spinach
Halloumi (Bake the Halloumi in a pre-heated oven for around 20 minutes prior to baking it into the Calzone)

Meatless Monday: Pan Fried Gnocchi (Vegetarian & Lactose Free (ish))

Today's meatless Monday dish is one of my favourites - Pan Fried Gnocchi!

Ingredients:
Enough Gnocchi for amount you are making it for (see guidance on packet)
1 Clove of Garlic
Spinach
Sun dried Tomatoes
Feta Cheese

Recipe:
1. Boil Gnocchi as directed on packet. Drain and set aside.

2. Heat some oil in a frying pan

3. Finely chop the garlic and add to frying pan, and fry until golden

4. Add sun dried tomatoes and gently fry

5. Add Gnocchi to pan and fry until golden

6. Add the spinach and heat

7. Remove from heat and add cubed feta cheese

8. Mix everything together

9. Serve


This is one of my favourite meals, but Gnocchi is super filing so remember, you won't need as much as you think you will. Especially because Gnocchi needs to be eaten when hot, letting it go cold turns it into a congealed mess and its not so good!
Definitely one to be served very hot!

Meatless Monday: Bagels with Bacon and Cheese (Veggie & Lactose Free)

Another meatless Monday has rolled around, and today I am coming back at you with Bagels, Lactose Free Cheese & Vegetarian Bacon. Yum!

Ingredients:
Onion Bagels
Lactose Free Cheese
Quorn Vegetarian Bacon

Recipe:
Cut the bagels in half and place on baking tray.





2. Cut Lactose free cheese into slices and place on bagels

3. Cut Vegetarian bacon in to slices and place on bagels


4. Pop all in the oven on gas mark 6 for 10 minutes


5. Enjoy!

Winter Warmers: The Perfect Hot Chocolate (Dairy Free)

Brrrrrrr! The weather outside is freeeeeeeezing! Yesterday (Friday) in the UK the snow really came down, and today its snowing again...and tomorrow even more is due. So what can you do but run outside and make a huge variety of snow creatures. Me and my boyfriend opted for a snow kitten... and that was hard enough to make. Kudos if you make a proper full sized snowman!

So once we'd made our snow cat we needed a nice drink to warm us up! So here is my step by step guide to a yummy (Dairy Free) hot chocolate!

Ingredients:
Soya Milk
Cocoa
Sugar
Vanilla Essence (optional)

Recipe:
1. Pour Soya milk into two mugs, and pour from mugs into Saucepan.


2. Put 1 teaspoon of cocoa powder into each mug



3. Add 1-2 teaspoons of sugar into mug.


4. Add a small amount of milk to cocoa powder and sugar and mix into a smooth paste.


5. Heat milk until it boils.


6. Add a teaspoon of vanilla essence if you fancy a vanilla taste.


7. Pour boiling milk onto cocoa paste and stir.


8. Drink!
