Meatless Monday: Tofu & Vegetable Patties


Hello & Welcome to another episode of Meatless Monday! Today's blog post are Tofu and Vegetable patties.

Ingredients:
  • 1 Carrot, Grated
  • Bunch of Spring Onions, Sliced
  • 1 Garlic Clove, Crushed
  • 3cm Piece of Ginger, Grated
  • 400g Block of firm Tofu, drained and crumbled.
  • 2 Eggs, lightly beaten


How to make them:
  • Combine all the ingredients in a bowl and mix.
  • Place in muffin trays, and cook in the oven, at 200 degrees until the patties begin to brown.
  • Serve with salad.
